Rosemary Chicken with zucchini from the Real Simple website. What was great about this recipe is that you freeze it before cooking so the chicken breasts marinated in the amazing smelling marinate! Thank Acey for suggesting it! You can google for the recipe if you want it.
Then I found a Shepherds Pie recipe that I altered a bit:
Ingredients:
2 pounds potatoes: russet cubed
2 tablespoons sour cream
1/2 cup chicken broth
salt and pepper
2 pounds ground beef
baby carrots sliced
1 white onion, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
2 teaspoons Worcestershire
1/2 cup frozen peas
1 teaspoon paprika
2 tablespoons parsley leaves
Directions:
Boil potatoes with skins in salted water. Drain and put into large bowl with salt, pepper, sour cream, and chicken broth: mash!
In a large pan on medium high heat cook ground beef and onion, season with salt and pepper. Once ground beef is browned add carrots cooking for about 5 more minutes.
In a small skillet over medium heat cook better and flour for about 2 minutes, whisk in broth and Worcestershire sauce, stir and cook until thickened.
Add gravy to meat and vegetables and stir in peas. Place meat mixture in baking pan, spread potatoes on top and sprinkle with paprika and parsley leaves.
Broil on high till potatoes are browned.
